Day 31: I did it! A recipe.

Easy last post for blog (nearly) everyday in May. A recipe by me. Enjoy!

Asian lettuce wraps (serves 4-6)

peanut or olive oil

1 red bell pepper, diced

1 white onion, diced

2 TBS minced garlic

1 lb ground beef or bison

1 cup of brown rice, cooked

10 – 12 leaves of romaine lettuce, separated and rinsed well

For the sauce:

1/2 cup soy sauce

1/4 cup brown sugar

1/4 cup hoisin sauce

Mix all of the sauce ingredients together. Place in refrigerator to chill while you prepare the rest.

Coat a pan with oil and heat on medium. Add the peppers, onions, and garlic and sauté for about 3 to 5 minutes. Add the ground meat and cook until browned. Reduce heat and mix in the rice. Cover the mixture in the chilled sauce (you may need to mix it again before adding it to the pan, just to make sure no brown sugar has settled). Cook on low for just a minute or two to make sure the sauce warms up and to allow it to reduce just a little. Spoon a scoop or two of the mixture onto a lettuce leaf and serve!
